Belgian table beer - inspired by DuPont Avril/Biolegere.
I'm going with a mini-saison recipe. Got a fresh sack of pilsener, and will add a little munich and some malted wheat. Mashing at 156 to try to retain some body. Shooting for 1.035, 20 IBU. Bittering with Mt Hood and finishing with saaz. Will ferment somewhere in the 80s with one vial of Saison yeast, and one vial of Brett C.
I'm pretty stoked about this one. I think I might reuse the yeast cake on a bigger saison and maybe even do a turbid mash.

Primary: Wethop Pale Ale, Kriek2
Conditioning: Biere de Table (FTW)
Secondary: Kriek, Doppelbrett, Funky Saison
On Deck: Chocolate Porter 9/6
Thinking about: ESB, Belgian Pale, Christmas Quad, hmmm vienna lager and doppelbock instead of the belgians? |

I am very scared...
This sounds awesome Wally.
I was thinking about doing an American Wheat/Rye, but I see Todd has taken that one.
I did just brew an English Pale Ale were the OG was 1040, so maybe that will be my beer. I am brewing it as a yeast starter for a BW I am going to brew next. But this beer is sort of a default for this Quest, so I will probably think of something else...well see.

Hey folks.. do we have room to share categories? I was signed up for Southern Brown, but after kegging my 4% Watermelon Wheat this hot-ass afternoon, I wouldn't mind calling an audible and competing with the "Quickshit Kid," (sorry Brendan, Todd gave you the handle, lol)
I could also enter the un-meloned version... but Todd, American wheat is your thunder on this one.
The reason I ask.... My 3 week old baby told me he wants me to take some time off from brewing... just while he's super small. I;ve got the green light soon.
Working on setting a date in September for the party. FAMILIES WILL BE WELCOME, YOU BET YOUR SWEET ASS. _________________ Get 30 extra gravity points by pressing up, up, down, down, left, right, left, right, b, a, start durring the mash! |

Was David G going to do an Ordinary Bitter or a Special Bitter (his post says Ordinary, list says Special)?

Hmmmmmmmm Ordinary vs Special now which do you think I am?
All kidding aside, if I brew a 1.040 English Pale Ale it could be either as I read the style guidelines.
Ordinary is 1.032 to 1,040
Special is 1.040 to 1.048
The rest of the recipe is pretty similar but I will have to check that. Our goal is to brew something under 1.045 I guess. So either category will do. It just depends.

I still am thinking I should do the Cream Ale but I would need help developing an extract or a partial mash ( 2 gal kettle capacity) recipe. If I can get some help I would do this style. _________________ http://www.csupomona.edu/~cycling/

Probably late september, at Jason's house, part of a late summer, following a County Fair presentation in Pomona - late afternoon/evening barbecue-get-together. see earlier post at the beginning of this thread for the comp. details. This will be an easy-going, hopefully blind and on draft competition.

Talked it over with Amy, and we've decided Saturday September 18th starting at 2:00. Those at the fair can head straight over after the demo.
Hope there are no major objections. If there are let it be known.
BTW, families are absolutely welcome, and I think it would be a great time, but please RSVP with a pm or e-mail, so Amy and I know how much food to plan on.
